Healthy Summer Fiesta Wraps
Wraps are a quick, no-cook summer meal that the whole family can enjoy — and even help create!
These Fiesta Wraps are a fun, hands-on way to get the family involved in the kitchen. This recipe features fresh vegetables, beans, and whole wheat tortillas, all of which are rich in fiber—a nutrient that supports digestive health and promotes satiety. They’re customizable, nutritious, and a delicious way to fuel summer adventures and build healthy habits together.
Servings: 4 Prep Time: 10 minutes
Ingredients:
4 Whole wheat tortillas
½ cup guacamole
½ cup black beans (no salt added)
½ cup corn
½ cup tomatoes cut in strips
½ cup bell peppers cut in strips
½ cup shredded lettuce
½ cup reduced fat shredded cheese (optional)
Instructions:
- Lay the tortilla flat on a plate or cutting board
- Spread 2 Tbsp of guacamole on each tortilla
- Sprinkle 2 Tbsp of black beans over the guacamole
- Add 2 Tbsp of cheese if desired
- Add layer of veggies
- Carefully roll the tortilla, folding in the sides as you go
- Slice in half and enjoy!
