Salmon and Creamy Sweet Potato Noodle Bowls

Fall is a great time to savor the rich flavors and nutritional benefits of root vegetables. Sweet potatoes are incredibly versatile root vegetables that make their way into both sweet and savory dishes alike. Sweet potatoes are rich in fiber, vitamins A and C, and manganese and are a good source of antioxidants. Because of their fiber content, they can positively impact blood sugar levels and may also have positive benefits for vision, immunity, and skin health given their vitamin A content. The sweet potatoes in this dish are spiralized to create a fun, gluten-free, grain-free alternative to traditional noodles. Coconut milk is used to create the creamy sauce making this also a dairy-free choice. Top these creamy “noodles” with a savory fillet of salmon for a punch of protein and omega 3 fatty acids. The combination of colors, flavors, and nutrients make this a hearty, delicious, nutritious bowl of goodness that you’re sure to enjoy!   

Prep Time: 10 min | Cook Time: 20 min | Total Time: 30 mins | Number of servings: 4

Ingredients:

  • 4 salmon fillets
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Pinch of sea salt and pepper
  • 6 pieces bacon, diced
  • 2 sweet potatoes, spiralized into noodles
  • 3 cups greens (spinach or kale)

For the creamy sauce:

  • ½ onion, roughly chopped
  • 3 cloves garlic, minced (about 1 tbsp)
  • 1 cup coconut milk
  • ¼ tsp sea salt
  • ¼ tsp ground black pepper

Directions:

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Dice bacon and spiralize sweet potatoes.
  3. Place salmon fillets on a baking sheet and season with smoked paprika, garlic powder, and a pinch of salt and pepper. Place in the over to bake for 15-20 minutes until flesh can be flaked with a fork.
  4. While salmon is cooking, in a large skillet over medium heat, cook diced bacon until crispy. Once crispy, place on a paper towel lined plate and set aside.
  5. Make creamy sauce: place onions in skillet used to cook bacon and cook for 4-5 minutes until softened. Add coconut milk, minced garlic, salt and pepper and stir to combine. Turn heat to low and let simmer until salmon has about 5 minutes of cooking time left.
  6. Return heat to medium and add sweet potato noodles to the sauce. Cover and cook until noodles are softened. Add spinach and cook until it wilts. Add bacon and mix well.
  7. Once salmon is finished, remove from oven and serve over the sweet potato mixture. Spoon extra sauce over dish. Enjoy with a side of additional steamed spinach or broccolini!
