Ingredients: Salmon Filet 1 lbs. cut into 2 oz. strips Marinade: 4 tbsp. Soy Sauce Lite 1 tbsp. Rice Vinegar 1 tbsp. Honey 3 ea. Garlic Clove (minced) 2 tsp. Ginger Root (minced) 1 tbsp. Sesame oil 1 tsp. Cracked Black Pepper Method: In a medium bowl combine soy sauce, rice vinegar, honey, garlic, ginger, sesame oil and black pepper then whisk to blend. Add salmon strips and marinate for 30 minutes. Set aside. Taco Sauce: 1/2 cup Vegan Mayonnaise 1 tbsp. Soy Sauce 1 tbsp. Sriracha Sauce 1 tbsp. Black Sesame Seeds 1 ea. Garlic Clove (minced) Method: In a small bowl combine vegan mayo, soy sauce, sriracha, sesame seeds and garlic. Whisk to blend. Set aside Slaw: 1 cup Red Cabbage (shredded) 2 cup Green Cabbage (shredded) 1 ½ cup Carrots (shredded) ¼ cup Green Onion 3 tbsp. Lime Juice (freshly squeezed) 2 tbsp. Cilantro (chopped) 1 tsp. Ginger (minced) ½ tsp. Cracked Red Peppers Method: In a large bowl combine all ingredients and toss. Set aside Lettuce Wrap Prep: 2 heads Iceberg Lettuce Method: In a large bowl fill halfway with cold water and 2 cups of ice cubes. Remove core from lettuce head and soak in water core side up. Layers will gradually separate carefully pull leaves apart. Using kitchen shears cut each lettuce leaf into 6-inch round diameter repeat until 8 each. Set aside and allow leaves to drip dry. Relish Topping: ½ cup roma tomato 1/4” dice ½ cup cucumber 1/4” dice (peeled deseeded) ½ cup red onion ¼” dice ½ cup cilantro (chopped) Method: In a medium bowl combine all ingredients and toss. Set aside Wrap Set-Up: Heat cast iron skillet. Add salmon strips searing both sides, cook until internal temp. 145 degrees. Set aside Place salmon strip into lettuce wrap, top w/ ginger lime slaw, add taco sauce and garnish with relish topping.
