In addition to large amounts of beta-carotene which is important for eye health, sweet potatoes are also a good source of fiber. Sweet Potatoes also contain Vitamin C to help support the immune system and maintain a healthy gut. Ingredients (Makes 4 servings) 2 medium sweet potatoes (about 1-1/2 pounds) 2 Tb olive oil 1 Tb Spicy Mustard (Dijon or Yellow mustard can be used too) 1 tsp minced fresh rosemary or ¼ tsp dried rosemary ¼ tsp salt ¼ tsp pepper 1/8 tsp paprika Directions Preheat oven to 400 degrees. Peel and cut each sweet potato lengthwise into ½ inch thick wedges, and place in large bowl. Mix remaining ingredients; drizzle over potatoes and toss to coat. Transfer to a greased baking pan. Roast for 25-30 min or until tender, stirring occasionally.
