Look for locally sourced, wild caught seafood at the grocery store or market. Shrimp is a lean protein option and low in saturated animal fat. My favorite way to eat shrimp? In a taco of course! Why order out when you can have the real thing right at home. Baked Shrimp Ingredients (makes about 6 tacos): 1/2- 3/4 lb, large, raw shrimp, deveined, thawed, peeled 6 Corn tortillas (~6 inch diameter) Garlic 2-3 cloves, minced 2 tbsp avocado oil (or olive oil) ⅛ tsp black pepper Juice of 1 lime Mango Salsa Ingredients: 1 small yellow mango 1/4 of a large cucumber 1 medium tomato Dash of salt and pepper Dash of cumin Juice of ½ a lime Sauce Ingredients: 2 tbsp low fat mayonnaise Dash of chili powder (optional) ½ cup plain Greek yogurt, non-fat Toppings (Optional): Alfalfa Sprouts Parsley, chopped Directions Preheat the oven to 350 degrees. In a bowl mix shrimp, avocado oil, pepper, and garlic. Then pour the contents into a lightly greased baking dish. Spread out the shrimp evenly. Cook in a preheated oven for 8-10 minutes or until shrimp are opaque. Cooking times will vary, depending on shrimp size. While the shrimp are cooking make the salsa by cutting up mango, cucumber, and tomato into small, diced pieces. Mix all together in a bowl with a dash of salt, pepper, cumin and 1/2 of a lime, juiced. Set aside. Now make the sauce by mixing mayo, yogurt and chili powder. Set aside. Once shrimp is cooked, pull out of the oven and squeeze the juice of 1 lime over the shrimp. To warm tortillas, place in the oven on a baking sheet for a few minutes if desired. Once the corn tortillas are warm it is time to assemble! Place ingredients in the order of your choice. I always do shrimp, sprouts, salsa, sauce, parsley. Enjoy!
